2016 Knights Bridge Cabernet Sauvignon, Collinwood

This is a really delicious, red fruit driven classic California Cabernet. Its best iteration brings a very warm comforting depth of flavor including cedar, allspice, cinnamon, and chocolate. The flavor profile of this wine is reminiscent of great California Cabernet from the 1970’s. Perfumed plum and red currant fruit are surrounded by lifted aromas of cedar and leather. Savory elements and red fruits play off more exotic notes of shaved cacao, and a dark single origin Ambanja chocolate. The inviting forward character of this wine is hard to resist now yet the overall balance suggests a potential for aging evenly and gracefully for twenty years or more. It's the wine you want when sitting in the Ahwanee at Yosemite at first snow fall.
